Chinese Burger/ Gua-Bao

How to Make Vegetarian Gua Bao at Home

1. The Steamed Buns

  • Ingredients: All-purpose flour, sugar, instant yeast, baking powder, warm plant milk (or water), and a touch of oil.
  • Method: Knead the dough, let it rise for 1 to 2 hours, shape into small ovals, brush with a little oil (to prevent sticking when folded), fold in half, and steam for 10 minutes.

2. The Savory Filling (Tofu Option)

  • Ingredients: Firm tofu (sliced), soy sauce, Chinese five-spice powder, a little vinegar, sugar, and ginger.
  • Method: Pan-fry the tofu slices until golden brown (about 7 minutes), then coat and glaze them in the simmered soy and five-spice sauce mixture.

3. Assembly

  • Open the warm, fluffy steamed bun.
  • Spread a layer of hoisin sauce, sriracha mayo, or hot sauce inside.
  • Add the seasoned glazed tofu or grilled vegetables.
  • Top generously with crushed roasted peanuts, fresh cilantro, and pickled mustard greens.

Bean Curd Layer with Tomatoes

Vegetarian bean curd layers (tofu skin or yuba) with tomatoes make a delicious, savory stir-fry that often mimics the comforting texture and style of a classic Chinese tomato and “egg” dish.

Ingredients

  • Bean curd sheets or rolls (Yuba): 3.5 oz dried (or 7 oz fresh/frozen tofu skin), cut or torn into bite-sized pieces
  • Ripe tomatoes: 3 to 4 medium-large tomatoes, chopped or wedged
  • Aromatics: 3 cloves garlic (minced), 2 slices ginger, and 2 scallions (green onions, chopped, separating whites and greens)
  • Cooking oil: 2 tablespoons
  • Seasonings:
    • 1 tablespoon soy sauce
    • 1 tablespoon ketchup (adds a nice sweet-and-sour depth)
    • 1 teaspoon sugar (to balance the tomato acidity)
    • ½ teaspoon salt (or to taste)
    • Optional: A splash of Shaoxing wine (1 tablespoon) and a dash of white pepper
    • Optional: A tiny pinch of Kala Namak (black salt) if you want an eggy flavor
  • Water or vegetable stock: ½ cup
  • Cornstarch slurry: 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, to thicken the sauce)
  • Sesame oil: 1 teaspoon for finishing

Instructions

Serve hot over a bed of fluffy jasmine rice.

Prep the Bean Curd:

If using dried bean curd sheets or sticks, soak them in warm water until fully soft, then drain and cut into pieces.

If using frozen/fresh yuba, thaw and gently rinse or separate the layers.

Pan-Fry the Bean Curd:

Heat 1 tablespoon of oil in a skillet or wok over medium-high heat.

Add the bean curd layer pieces and stir-fry for 2–3 minutes until slightly golden and puffy. Remove and set aside in a bowl.

Cook the Aromatics & Tomatoes:

Add the remaining oil to the same pan. Toss in the garlic, ginger, and scallion whites. Cook for about 30 seconds until fragrant.

Add the chopped tomatoes. Cook over medium-high heat, pressing on them gently, until they soften and release their juicy red sauce (about 2–3 minutes).

Combine and Braise:

Stir in the cooked bean curd layers.

Pour in the water (or stock), soy sauce, ketchup, sugar, salt, and Shaoxing wine.

Bring everything to a gentle simmer for 3 to 5 minutes so the bean curd layers absorb all the vibrant sweet-and-sour tomato flavor.

Thicken and Serve:

If you want a glossy, thick gravy, drizzle in the cornstarch slurry and stir until the sauce thickens.

Turn off the heat, stir in the sesame oil and remaining green onion greens.
